Recipe 1003 - Sweet Potato Hash -



Sweet Potato Hash



4                        Medium Sweet Potatoes

2-4 T                 YUM PIG ORIGINAL BUTT RUB

2-5 T                 Good olive oil

1 lb                   Ground Sausage / your choice

3-4                    Sweet Peppers

1-2                    Serrano Peppers

1-2                    Eggs




Peel and dice sweet potatoes into bite size pieces.  Slice sweet peppers and serrano peppers and set aside.   (Serrano pepper is optional because it will bring a little heat)


Take a large skillet and cook the sausage on medium heat until cooked through.  Turn off heat. Remove sausage from the skillet and place on a paper towel in a bowl to ‘drain’. Leave drippings in the skillet. 


Return skillet to stove top and place on medium heat.  Add additional Olive oil.   Place diced sweet potatoes in skillet.  Begin cooking sweet potatoes.  Move them around in pan to keep them from sticking.  Season with YUM PIG ORIGINAL BUTT RUB.  When the sweet potatoes begin to soften add peppers and the sausage you have set aside to the mix.  You may have to add additional oil.  Continue to stir and cook until sweet potatoes are soft.  Once the sweet potatoes are soft remove from heat and let the dish rest.


While dish is resting prepare the eggs to your preference, scrambled, fried or poached.


Once the eggs are finished, plate hash on the bottom, eggs on top.
