Cream of Carrot Soup - Recipe 1001




8 C                 Vegetable Broth

2 lbs              Fresh Carrots

3                    Leaks

29 oz can       Sweet Potatoes

4                    Celery Stalks

4 T                 Olive Oil – EVOO

3”                  Ginger Root

1t                  Nutmeg

1t                  Pepper (Black or white)



Rough chop veggies – carrots, celery

Thinly slice Leaks.

Peal and grate Ginger root


Place broth in large stock pot.  Add remaining items, carrots, celery, leaks, sweet potatoes, nutmeg and pepper.

Bring to a boil on stove top.  Reduce to medium heat and let mixture cook until tender.  Approximately, 30 minutes.

Once vegetables are tender, remove from heat and let stand until cool.

Use an emersion blender to puree the mixture until smooth.  You can also pour the mixer into a food processor or blender to mix.

Salt to taste.

Serve in a bowl or cup, hot or chilled.  Garnish with chives or parsley.  Serve with crackers or croutons.

You may also mix in whole cream or half n half, about. 4-6 oz.  It's no loner Vegan but it will increase the creaminess.
